I went to the refrigerator the other day and it was clearly time to do some cooking pronto! I’m sure you’ve all had those days….vegetables that are getting a little soft, some ground beef that NEEDS to be used today or else ….right? So yesterday was that day and I decided to try and create my version of Sloppy Joe.
This turned out great! Slightly sweet and the Worchestershire sauce completes all the flavors. Hot and hearty, easy to make. Perfect for the cold weather we’ve been having here. We served it over rice because that’s what we had on hand. It really soaked up the juice and worked perfectly. However I’m thinking drippy, sloppy joe on a hamburger bun would have been awesome!
- 2 Tbsps. olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 4 cloves garlic, minced
- 1.5 lbs ground beef
- 1 cup beef broth
- 1 28 oz. can (3.5 cups) crushed tomatoes
- 3 Tbsps. brown sugar
- 2 Tbsps. distilled vinegar
- 2 Tbsps. Worcheshire sauce
- 3 Tbsps. corn starch
- 2 Tbsps. chili powder
- 1 tsp. salt
- 1 tsp. oregano
- 1 tsp. granulated garlic
- ½ tsp. black pepper
- Mix meat seasonings together and set aside.
- In a large skillet, heat oil on medium and saute onion, garlic and peppers until onions are translucent.
- Add ground beef and cook until browned.
- Add meat seasoning, then all other ingredients and mix well.
- Bring to low boil then reduce heat and simmer uncovered for 20-30 minutes.
