This recipe is inspired by a half day trip we took Friday to Old Forge, NY in the base of the Adirondack Mountains. Every time we head up that way, our first stop is Tony Harpers Pizza and Clam Shack for their Whiskey Wings. It’s pretty much the only time we order wings.
This prompted us to do something we’ve never done before. Grill and smoke wings at home and slather them in our own Jack Daniels Whiskey sauce. When you smoke meat, you need to do it on a low temperature with wood chips first so they get that nice flavor. We used cherry wood chunks for this recipe that a friend of ours gave us. You can purchase wood chips at the store and there are instructions on the package on how to use them. Some people soak them in water first so when you put them on the grill they really smoke.
Then you increase the heat and char them up a bit by moving the coals to the center and add more charcoal until they get hot.
Back inside, we made the sauce on the stove top. If you want to cook some of the alcohol out of the whiskey, simmer it for 2-3 minutes.
- 2 dozen chicken wings
- ⅓ cup butter
- ¼ cup + 2 Tbsps. Jack Daniels (or any other whiskey)
- ¼ cup Franks hot sauce
- 3 Tbsps. brown sugar
- 1 Tbsp. corn starch
- ½ tsp. chili powder
- ¼ tsp. each black pepper, granulated garlic (or garlic powder)
- Make sauce by heating butter and in a medium sauce pan on medium heat.
- Once the butter is melted, remove from heat and add remaining ingredients and stir until combined. Bring to a simmer to reduce the alcohol.
- Prepare charcoal grill for indirect cooking with two piles of coal on opposite sides
- Once hot, place wings in the middle of the grate and add smoking wood to each pile.
- Smoke for 20 minutes
- Remove wings from grill and mover coals to the center to grill over direct heat; add more coal and allow to heat up if need be.
- Place wings back on grill over direct heat and cook until you reach your desired crispiness level. About 20 minutes.
- This can be done on a gas grill as well, following the same method with high heat on one side of the grill and smoking wood for 20 minutes, then remove the wood and turn both burners on medium high and cook wings until you reach your desired crispiness level.
- Once done, coat wings with sauce and serve hot.
