Ingredients
- 2 lbs. (4 medium) potatoes, peeled, cubed bite-sized
- ¼ cup olive oil
- ¼ cup scallion (green onion), chopped
- 2 Tbsps. parsley, chopped
- 2 Tbsps. lemon juice
- 1 tsp. garlic, minced
- ¾ tsp. each mint, salt
- ½ tsp. paprika
- ¼ tsp. black pepper
Instructions
- In a large pot bring cubed potatoes to a boil on high heat. Cook until tender, about 10 minutes. Drain water and transfer potatoes to a large bowl.
- Add remaining ingredients and mix well. Serve hot or cold.
