Today, October 18, is officially Chocolate Cupcake Day. In honor of the occasion, and given the time of year, I made some yummy double chocolate cupcakes with a creamy pumpkin cream cheese frosting. Hope you enjoy!
Double Chocolate Cupcakes with Pumpkin Cream Cheese Frosting

Ingredients
Cupcakes
- 2 cups flour, sifted
- 1 cup cocoa powder, sifted (I use Hershey's)
- 2 cups hot water
- 2 cups sugar
- 2 eggs
- 2 tsps. baking soda
- 1 tsp. baking powder
- ½ cup vegetable oil
- 2 tsps. vanilla extract
- ½ cup chocolate chips (optional if you want that extra chocolate gooeyness)
Frosting
- 4 oz. (1/2 block) cream cheese, softened
- ¼ cup (1/2 stick) butter, softened
- ¼ cup pumpkin puree (plain, not pumpkin pie filling)
- 1¼ cups powdered sugar, sifted
- 1½ tsps. pumpkin pie spice
- Flour to thicken icing as needed.
Instructions
- Preheat oven to 350° F.
- In a large bowl mix cake ingredients with an electric mixer until smooth and well combined.
- Line the muffin pan with cupcake wrappers.
- Fill the cupcakes ¾ of the way to the top with batter and top with ½ cup of chocolate chips.
- Bake 18-20 minutes or until until a toothpick inserted into the middle comes out clean. Allow to cool completely.
- In a medium bowl mix icing ingredients with an electric mixer and spread on cooled cupcakes.
