This is one of my favorite fall recipes to make. There is nothing like the smell of cinnamon and cloves filling the kitchen on a cool, fall afternoon. The best part about this bread is it’s made on the stovetop and cooked via steam, so you are always guaranteed a soft and moist product. Heck, it’s just fun to watch the bread rise out of the coffee can! I hope you enjoy!
Coffee Can Pumpkin Harvest Bread

Ingredients
- 1 cup brown sugar
- ½ cup margarine
- 2 eggs
- 1¾ cup flour
- 1 tsp salt
- 1 tsp baking powder
- ½ cup plain pumpkin
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp ginger
- 1 tsp ground cloves
- 1 (1lb ) metal coffee can (do not use plastic or cardboard!)
- shortening and sugar to coat
Instructions
- Remove coffee from can and rinse.
- Cut lip off of can with can opener ( illustration below)
- Coat can with shortening
- Place 1 tbsp of sugar in can and cover with lid
- Shake can until coated with sugar; remove lid
- Put all other ingredients in a large bowl and mix with hands until blended
- Pour batter in can
- Place can in deep kettle and fill with hot water until ¼ the way up the can
- Cover, bring to a boil and then reduce heat to medium (maintain a slow boil) and cook for 1 hour and 45 minutes
- Remove can from kettle and allow to cool before removing from can
- Bread should slide right out of can when tipped upside down and given a shake or two
