Indian Chicken Curry Soup

Ingredients
- ⅓ cup basmati rice
- Water for soaking rice
- 2 Tbsps. butter
- 1 cup onion, chopped
- ½ cup (2 stalks) celery, chopped
- ½ cup (1 medium) carrot, chopped
- ¾ lb. boneless, skinless chicken breast, cubed bite-size
- 5 cups chicken broth
- 1 ½ tsps. curry powder
- ½ tsp. each coriander, cumin, salt
- ⅛ tsp. chili powder
- ½ cup heavy cream
- ¼ cup fresh cilantro, chopped
Instructions
- Place rice in a small bowl and cover with cool water. Allow rice to soak 10 minutes then drain through a mesh strainer. Set aside.
- Heat butter in a large saucepan or pot on medium heat. Add onion, celery, and carrots and sauté 5 minutes.
- Add cubed chicken and sauté 5 minutes searing on all sides.
- Stir in broth, spices, and salt. Bring to a boil on high heat. Reduce heat to medium-low and simmer uncovered 20 minutes.
- Stir in rice and cream and simmer 10 minutes.
- Stir in cilantro and serve.
