Easy Indian Shrimp Jalfrezi

Ingredients
- 3 Tbsps. oil
- 1 ½ lbs. medium-size (31/40) shrimp, uncooked, peeled, deveined
- 2 cups bell pepper, seeded, roughly chopped
- 2 cups onion, roughly chopped
- 2 fresh jalapeño peppers, minced
- 1 Tbsp. garlic, minced
- 1 Tbsp. fresh ginger, minced
- 1 ½ tsps. each coriander, cumin, salt
- ½ tsp. each chili powder, cinnamon, turmeric
- ⅛ tsp. cloves
- 1 Tbsp. tomato paste
- ⅓ cup water
- 1 Tbsp. butter
- 1 Tbsp. lemon juice
- 2-3 Tbsps. fresh cilantro, chopped
Instructions
- Heat oil in a large sauté pan on medium heat. Add bell peppers and ginger and sauté 2 minutes.
- Add onions, jalapeños, garlic, and ginger. Sauté 2 minutes.
- Sprinkle in spices, salt, tomato paste, and add shrimp. Mix well and sauté 1 minute.
- Stir in water and add butter. Cook uncovered 5 minutes, stirring occasionally.
- Stir in lemon juice and sprinkle in cilantro. Serve with basmati rice.
