Here we are….finally made it to the last stop on our journey to create an ethnic meal out of our Thanksgiving leftovers. Mexico! What a great place to try and get creative with that leftover, semi-dry turkey breast staring at you from the bottom shelf of the refrigerator. Super easy and a great alternative to the traditional, staple “next day” meals such as the turkey sandwich, or turkey soup…..I hope you like it
Top 3 Ways to Turn Thanksgiving Leftovers into an Ethnic Meal Part 3: Mexican Turkey Quesadillas

Ingredients
- 2 cups shredded turkey breast
- 4.5 oz. can of diced chilies, drained
- 4 oz. can sliced mushrooms, drained
- ¼ tsp. salt
- ⅛ tsp. black pepper
- ½ tsp. granulated garlic
- 2 tsp. chili powder
- ¼ tsp. oregano
- 1 tbsp. sour cream
- 4 fajita size flour tortillas
- 4 oz. Colby Jack cheese, grated
- 2 tbsp. butter
Instructions
- In a large bowl, combine turkey, chilies, mushrooms, salt, pepper, garlic, chili powder, oregano and sour cream; mix well.
- Melt 1 tbsp. butter over medium heat in a large skillet
- Place two tortillas in pan and then spread turkey mixture on top of tortillas; top with grated cheese.
- Place remaining tortillas on top of the others and press firmly.
- Griddle the quesadillas until golden brown and crispy on each side; add remaining 1 tbsp. of butter to skillet if needed after flipping.
- Cut and serve
